George Knight is a long-time commercial fisherman. His grandfather initially worked as a shrimper before transitioning to construction, while his father returned to shrimping full-time in the 1960s. Knight describes how he started working at the docks at the age of nine, heading shrimp and learning the intricacies of the shrimping industry.

On April 13, 2024, Kristin Meeuwen, Lillie Waters, and Blake Pavri interviewed Holly Boone for the Dock Stories project at Boone’s Seafood in Darien, Georgia. Holly Boone, who married into the Boone family 25 years ago, has lived her entire life in the area. She married a fisherman and eventually took on responsibilities at Boone’s Seafood, a multi-generational family-owned dock that has been operational for over 60 years. The interview provides a detailed account of Boone’s experiences managing the dock, including her transition from occasional help to a central role in its operations.

On April 13, 2024, Lillie Waters, Kristin Meeuwen, and Lilah Henderson interviewed Jim Dickey for the Dock Stories project at the UGA Marine Extension/Georgia Sea Grant in Brunswick, Georgia. Jim Dickey, a longtime resident and shrimper from St. Marys, Georgia, shares his extensive experience in the shrimping industry, which began when he was 16 years old. His family operated Dickey and Sons Seafood, a dock that was a significant part of the local economy from the 1950s until it was sold in 2010.

On April 13, 2024, Logan Collins and Lilah Henderson interviewed Kim Boone for the "Dock Stories" project at Boone’s Seafood in Darien, Georgia. Kim Boone shares her family connections to the shrimping industry, detailing the history of Boone’s Dock, which has been part of her husband’s family for generations. Her own family also had significant ties to the industry, with her grandfather and parents operating a dock in Meridian, Georgia, before selling it to the state in the early 1990s.

On March 4, 2025, Kristin Meewen and Blake Pavri interviewed Allen Amason in Statesboro, Georgia, for the Dock Stories oral history project. Allen Amason, former Dean of Georgia Southern University and a scholar in strategic management, reflects on his early years growing up and working at his family's shrimp, crab, and ice processing facility in coastal Georgia. Founded by his grandfather in the 1940s and later expanded by his father in the 1970s, the business reached its peak in the 1980s and employed over 100 workers.

On February 28, 2025, Lilah Henderson and Blake Pavri interviewed Andy Amason in Darien, Georgia, for the Dock Stories project. Andy Amason is a longtime resident of Darien and former owner of Sea Gardens, Inc., a dock and seafood processing facility that was originally established by his grandfather in the mid-20th century. Amason began working at the dock as a child and eventually took over operations from his father in the 1980s.

On February 27, 2025, Blake Pavri and Logan Collins interviewed Christine Skinner at her dock in McIntosh County, Georgia, for the Dock Stories oral history project. Christine Skinner is a longtime shrimper and business owner who, along with her late husband, moved to McIntosh County in 1972. They purchased waterfront property and established Skinner Seafood in the early 1980s. Skinner has operated the dock ever since, continuing to oversee its daily operations with the help of her children and extended family.

On February 27, 2025, Logan Collins and Blake Pavri interviewed John Wallace in McIntosh County, Georgia, for the Dock Stories oral history project. John Wallace is a third-generation fisherman who began working in the local seafood industry in the early 1970s. After graduating from high school, he crabbed for several years before joining his father’s shrimping business and eventually building and captaining his boat, the Gale Force. Wallace went on to lease and operate numerous docks throughout McIntosh County and served as president of the Georgia Shrimp Association.

On March 1, 2025, Logan Collins and Lilah Henderson interviewed Captain Leonard Crosby at his home in Richmond Hill, Bryan County, Georgia, for the Dock Stories oral history project. Captain Leonard Crosby is a lifelong commercial fisherman and former dock manager who played a central role in establishing the Bryan County Fishermen’s Cooperative in the late 1970s. Raised in Georgia, Crosby spent thirteen years working for the railroad before transitioning to shrimping full-time.

On February 28, 2025, Logan Collins and Kristin Meeuwen interviewed Captain Lindsey Parker at the Sea Grant dock in Brunswick, Glynn County, Georgia, for the Dock Stories oral history project. Captain Lindsey Parker is a retired commercial fisherman and long-time captain of the University of Georgia Marine Extension Service’s research vessel, the Bulldog, where he worked from the early 1980s until his retirement around 2017.
